Maybe you are familiar with Cachaça (Kashasa), maybe you are not. If it is the latter then may I suggest that you do become acquainted, the sooner the better, as you will see a lot more of this spirit in bars and restaurants this summer.
Cachaça is a Brazilian spirit that is distilled from fresh sugar cane. Similar to rum, cachaça, in its pure unaged form is fresh and lively, with aromas of honey and sugar cane. The flavors continue on the tongue with a slight earthiness. Mixed the cachaça with fresh lime, sugar and ice, to make becomes Brazil’s national drink, the Caipirinha. We carry at least ten different brands of cachaça but right now ‘Pitu’ is one of my favorites as it is light and approachable and makes a fantastic cocktail.
The Caipirinha is simple to make (think of it as a ‘Mojito’ without the mint) and is a great summer time thirst quencher. In a short rocks glass, muddle a spoonful of sugar or sugar cane syrup with three wedges of lime, fill with ice and add a good measure of cachaça. Simple as that!
