This is a very popular and much-exported Munster-style cheese, named for the high pastures of the Vosges Mountains in Alsace, but now made in the Perigord region of southwestern France. It is semi-soft with subtle hints of fruit and nuts. Chaumes melts easily and can be cubed onto a cheese tray.
