These lush, green, valley meadows have supported generations of dairy cows and farmers. This is truly a farmstead operation in every sense of the word: they grow the grain, milk their own herd, and immediately convert that warm milk into this Beaufort-style cheese. Aged for four months, it is semi-firm in texture with a little grana. The flavors are robust finishing with a little bite, which will definitely add some zest to grilled dishes.

Wine pairing: Dry Riesling or New Zealand Sauvignon Blanc.
