Similar to Cabrales, this is Spain's best-known blue cheese. The best are made with unpasteurized summer milk, making winter the best time to enjoy them. It has an almost purple veining, similar to Roquefort, but is drier and not as salty. Traditionally wrapped in maple leaf, it has a pungent smell, and spicy, lip-smacking finish. This is a great after-dinner cheese, although it can tend to overpower anything with it.

Wine pairing: Full-bodied reds from Ribera del Duero or Oloroso Sherry.
