One of the earliest Roman cheeses, Provolone comes in two forms - mild and aged. This aged delicacy has a yellowish-white interior, a firm, oily, crumbly texture, and a strong, spicy flavor. It is a great antipasto cheese.

Wine pairing: Straightforward, medium-bodied Italian reds such as Chianti Classico and Barbera.
