Also known as Schabziger, this unique cheese is flavored with Blue Melilot (Fenugreek) a wild clover which grows in the locality and gives the cheese its unique flavor. It is a whey cheese, similar in texture to Ricotta Salata, making it very low fat. It is usually eaten grated on food or combined with butter. The Swiss eat this distinctive cheese on fresh buttered bread. It is one of the earliest protected brands in the world, being produced since the 8th century.

Wine pairing: Auxerrois or dry Riesling.
